Mooncakes are Chinese pastries traditionally eaten during the Mid-Autumn Festival. The festival is for lunar worship and moon watching; moon cakes are regarded as an indispensable delicacy on this occasion. Mooncakes are offered between friends or on family gatherings while celebrating the festival, one of the three most important Chinese festivals.

Typical mooncakes are round or rectangular pastries, measuring about 10 cm in diameter and 4-5 cm thick. A thick filling usually made from lotus seed paste is surrounded by a relatively thin (2-3 mm) crust and may contain yolks from salted duck eggs. Mooncakes are rich, heavy, and dense compared with most Western cakes and pastries. They are usually eaten in small wedges accompanied by Chinese tea.

Most mooncakes consist of a thin tender skin enveloping a sweet, dense filling. The mooncake may contain one or more whole salted egg yolks in its center to symbolize the full moon. Very rarely, mooncakes are also served steamed or fried.

Traditional mooncakes have an imprint on top consisting of the Chinese characters for “longevity” or “harmony” as well as the name of the bakery and the filling in the moon cake. 老师先告诉我们月饼的分类:有苏式,广式,还有冰皮等等,今天我们要做的就是冰皮月饼,这是一种外皮光滑洁白半透明的月饼,它的表面像是覆盖了一层淡淡的薄膜,看起来就像穿了一件精美的冰雪外衣一样。

下面,我们就开始月饼的正式制作。大厨先为我们准备了一些原材料:有冰皮面团,紫薯馅,豆沙馅,南瓜馅等等。

首先,师傅先让我们每人拿一团冰皮面团,用力把这它拍开,拍到你觉得大小合适,厚薄均匀即可;第二步,就是挑选你喜欢的馅儿,把它放到展开的冰皮上,并用冰皮把馅儿包起来了。

Leaders from the preceding Sung dynasty (A.D. 960-1280) were unhappy at submitting to the foreign rule, and set how to coordinate the rebellion without being discovered. The leaders of the rebellion, knowing that the Moon Festival was drawing near, ordered the making of special cakes. Backed into each moon cake was a message with the outline of the attack. On the night of the Moon Festival, the rebels successfully attached and overthrew the government.

Today, moon cakes are eaten to commemorate this legend and was called the Moon Cake.

For generations, moon cakes have been made with sweet fillings of nuts, mashed red beans, lotus-seed paste or Chinese dates, wrapped in a pastry. Sometimes a cooked egg yolk can be found in the middle of the rich tasting dessert. People compare moon cakes to the plum pudding and fruit cakes which are served in the English holiday seasons.Nowadays, there are hundreds varieties of moon cakes on sale a month before the arrival of Moon Festival.
